The grapes are handpicked at optimal ripeness before being chilled and crushed. We use a basket press to softly extract the juice before it is transferred into a clay Amphora pot for where wild fermentation is encouraged. Once the fermentation has finished, we leave it on its lees for a short period of time before blending and bottling.

TASTING NOTES:

Aromas: Intense and complex. Salt bush, oyster shell, lemon and hints of orange blossom.

Palate: Seamless intensity. A delightful, vibrant but powerful palate. Lively flavours of lemon zest which then is married with a stone like minerality to give a satiating, lip smacking finish that travels long after consumption.

Fiano a “classical vine” of southern Italy that likely has its origins in ancient Roman viticulture and perhaps may have even been cultivated by the ancient Greeks before them.  The Fiano vines are planted at the highest point of the vineyard, and cooled by our fresh afternoon sea breeze coming off the pristine Geographe Bay. Fiano is characterised by the chalky minerality and citrus acidity you can expect from this classical vine.
