Fiano 2025

$35.00

2025 WA Alternative Varieties ‘Wine of the Show’

The grapes are handpicked at optimal ripeness before being chilled and crushed. We use a basket press to softly extract the juice before it is transferred into a stainless steel tank and a used French oak barrel. Wild fermentation is encouraged. Once the fermentation has finished, we leave it on its lees for a short period of time before blending and bottling.

TASTING NOTES:

Aromas: Beautiful lift of florals, orange blossom, hints of jasmine. Hazelnuts and a touch of toastiness with a sprinkling of lemon zest.

Palate: A luscious palate with a delicate spine of natural acidity that runs the length of the palate. Lively and lithe, while balanced with the rich textural components, giving the palate weight and depth. Sweet fruit flavours of pineapple, kiwi and a hint of grapefruit.

Fiano a “classical vine” of southern Italy that likely has its origins in ancient Roman viticulture and perhaps may have even been cultivated by the ancient Greeks before them.  The Fiano vines are planted at the highest point of the vineyard, and cooled by our fresh afternoon sea breeze coming off the pristine Geographe Bay. Fiano is characterised by the chalky minerality and citrus acidity you can expect from this classical vine.
