Using estate grown Sangiovese, the fruit is hand harvested, then crushed and de-stemmed. The juice is left to sit on skins for two days to extract some colour before being pressed off softly with our basket press. The juice is then settled and racked before fermentation is started. Small batch, dry and savoury style rose.
TASTING NOTES:
Aromas: Complex nose, hints of cashews, eucalyptus leaf, forrest floor. Some citrus zest, black forrest cake cherries.
Palate: Softly coiled, savoury style. Grapefruit and blood orange. Texture on the front palate before moving into the savoury/pithy qualities. Delicate acidity throughout.
