The fruit is handpicked at optimal ripeness and then crushed into Amphora clay pots. Wild ferment is encouraged and once ferment is dry we press off into used large format French oak. After 12 months of maturation the wine is bottled. Enjoy now or cellar for up to 10 years.
TASTING NOTES:
Colour: Plum red
Aromas: Lifted with woody spices and bitter dark chocolate,
Palate: Very sophisticated, purity of fruit, concentration, length of flavour. Liquorice strips, dark plum, alpine herbs, black cardamom pods and green olive. Superbly balanced, with fine gravelly tannin, texturally delicious.
