A blend of Grenache and Monastrell grown on our property. We hand harvest both varieties together, at optimal flavour before the fruit is destemmed and crushed. The juice is left in contact with skins for two days before pressing off softly using our basket press. The juice is settled, racked and then inoculated for fermentation. Great care is taken to stop the fermentation with just a hint of sugar to round out the palate. The wine is bottled early to preserve the fruit and floral characters.
TASTING NOTES:
Colour: Pale fuchsia
Aromas: Lifted nose with hint of musk sticks, strawberry blossoms, and vanilla.
Palate: Soft, generous, lovely sweet fruit. Delicate raspberries and strawberries dance on the palate. Great acid balances the texture of the wine giving a fresh, clean, crisp finish.
